Nothing epic going on here

Hey, I kept waiting to cook something that would blow everyone's mind! Then I realized that day will never come.  So here's some of the usual, non-mind-blowing fare.

First in the line-up, some homemade flour tortillas.  See, we don't discriminate here at Shorty Can Burn.  Corn, flour, we will happily eat them all.


The final product: ye olde bean burrito. I was kind of excited about the sauce, which was my (reasonably successful) attempt at replicating one served by a local restaurant.  I liked their sauce so much that I actually tried to get them to sell me a quart of it, which they refused to do. This ought to teach them not to try to deprive me of delicious sauces--I will simply make a sauce clone in my evil underground sauce laboratory! Ha ha ha ha! HA HA HA HA!!!!!




















This is an adaptation of this recipe over at http://www.101cookbooks.com/.  The tasty part about this (which may not be obvious from this EXTREME close-up) is that you saute cooked pasta in some olive oil, then dump it into a soup.  Neat technique!  I added some broccoli for some green.
And this is my version of this pesto recipe from the PPK, although what I did bears little resemblance to the PPK version. I didn't have cauliflower, so I roasted broccoli instead, and I didn't have time to make tofu balls, so I used gardein fake chicken instead. I also added in tofu feta and sundried tomatoes.  Nothing special, but pretty tasty. I used half rice pasta, half regular, and the taste did not make me want to quit eating pasta forever, so that was a plus (I am struggling with finding a healthier substitute that we like for white pasta in Italian-style dishes).

  1. You do a great job with those tortillas. I'm surprised that place wouldn't sell you their sauce! Most places (at least ones who know how good their sauces are) are willing to accept your money...
    You show them, though.

  2. Strange that they wouldn't sell you some of the sauce. I've never been told no when asking if I can buy something like that to go. I agree with Maud- those tortillas look perfect! Everything looks great, really. Yum!

  3. I have flour tortilla envy! A few years ago (while still veggie, but not vegan), I tried my hand at flour tortillas (with butter), and they never turned out well!

    I've read that there is very little difference on the glycemic index regarding whole wheat or white pasta. I throw a little rice pasta into the rotation every now and then, too!

  4. Are you going to share your knock off recipe for the sauce? I go crazy for killer sauces. They'd better watch out...they've possibly created a formidable sauce competitor in not selling you any and leaving you to recreate it yourself.

    That pesto combo does sound like a delicious collection of items.

  5. Very cool idea, frying some of the noodles in a noodle soup...your broth is a gorgeous colour, too.

    And, yeah, what about that sauce recipe? Or just even a hint about flavours if you can't recall exactly what you did. I'd be interested too.

    Maud and Molly, I know, I sorta couldn't believe they wouldn't sell me some sauce either. There *may* have been a language barrier thing going on, or maybe it was just spitefulness on their part!! ANyhow, thanks for stoppin' by.

    Hey Ingrid, I may off track on the white pasta thing, but all I know is that we used to eat TONS of the stuff, and now that we rarely eat it, both the hubby and I are much leaner and (I think) more energetic. But I miss it so....sniff!

    Rose and Zoa, I will do a post where I try to recreate what I did, sauce-wise. It might be kinda hard because I used homemade enchilada sauce that we canned back in July as the base (don't totally remember what all I threw in at that point) and then went from there. And thank you both for the kindly words!

    I'm a little shocked that the Mexican restaurant wouldn't sell you some sauce....that's crazy! The places around here are always happy to sell you whatever you want.
